On an oven tray lay all the vegetables and mix them with salt and pepper and the olive oil. Bake it until cook approx. 20min fan bake 180c.
Leave it cool down. Then add the balsamic vinegar, the maple syrup and the chopped parsley.

For the mayonnaise, mix together the lemon juice, mustard, soy milk. With a whisk add step by step the oil to the mix until obtain the right consistency.
Mix the celeriac grated with the raisins, walnut and diced apple. Add mayonnaise to the mix, the quantity of mayonnaise depending on your taste. Enjoy!
If the taste of celeriac is too strong for you, try to mash it with potatoes, a mash potato/celeriac is perfect to go with any veges or meat!
