Ingredients

1/2 cup almonds
150g coconut oil (1cup)
1 tbsp of honey
1 tsp vanilla extract
1 cup cocoa
1/4 cup sultanas
1/4 cup raisins

Method

Put the almonds in a frying pan and toast them on a medium-high heat until brown. You will need to shake the pan to move them around every 30 seconds or so to brown both sides. It will takes about 5min. Set aside to cool when done.
Melt the coconut oil, honey and vanilla in a pot over a low heat. Remove from the heat and add the cocoa and stir until well blended. Throw in the nuts, sultanas and raisins and mix through.
Pour mixture out into a small tray (18 x 18cm )lined with baking paper or into silicon moulds and refrigerate until set. Cut into pieces with a knife and store in the fridge.
