Serves 6

Ingredients

280 g red split lentils
1 onion
3 garlic cloves
1 carrot diced
1 red capsicum (optional)diced
1 tomato diced
1 tsp of paprika (for the ones who like a bit of smokey flavor: smoked paprika)
1/2 tsp of turmeric
1/4 tsp of cinnamon
1 tsp of cumin
Salt and pepper
1 Tbsp of tomato paste
3 Tbsp of olive oil 
1 cube of chicken stock or vegetable stock
2L of hot water

hot red chilli flakes (optional)

Method

Mince the onion and the garlic, in a pan pour the olive oil, add the onion and garlic, cook until golden then add the spices and mix on medium heat.
Add the carrot, tomato and capsicum, mix and add the chicken stock and the tomato paste.
Pan fry it for 2min, add the lentils mix and add the 2L of hot water, mix again and cover it. Cook it on low heat for 30 to 40min.
Mix the soup with a stick blender.

Ready!!
