75g to 100g of streaky bacon/marinated in soy sauce tofu or smoked tofu
1 generous handful of green beans
1 to 2 kohlrabi
350g arborio rice
1 brown onion
1 bouquet of chives
1.5L of vegetable stock
50mL of white wine
50g of cream/soy cream
salt and pepper to taste
Peel the onion and the kohlrabi. Dice them separately. Slice finely the green beans. Dice the streaky bacon/tofu.
In a large pan, cook the streaky bacon. When it is ready add the onion until golden. Add green beans and kohlrabi, toss once or twice and then cover for around 20min.
Add rice and white wine, toss the mix, pour 1/3 of the vegetable stock and keep tossing. When the liquid has evaporated, add another 1/3 of stock and repeat until stock all gone.
Remove from the stove and add the chopped chives, the cream and the nutmeg, salt and pepper.
